Friends! I have been a bit MIA here on this blog of mine.
Sitting idle is not the reason though! My little people are working so very hard to earn money for a trip next year with Fine Arts and I have been dutifully by their side teaching them how to make various handmade items that they will be selling. I love, love, love making things! I have in fact determined that I am a “maker”. I love to make just about anything (including a mess)! This time spent making handmade treasures with my girls will be something I cherish forever!
I pulled myself away from all they yarn, paint, thread, pinecones and fabric to make this roasted veggie dish that I think will be pure deliciousness this Thanksgiving! I couldn’t let this Holiday go bye without at least posting one recipe.
Side note….cannot hardly believe that Thanksgiving is this week!
I love Thanksgiving! We have a silly tradition of whipping marshmallows across the house at each other every Thanksgiving morning! This year I plan to pummel Matt with marshmallows!!!I know most people look forward to marshmallows on top of their sweet potatoes…I like to pelt mine at my husband!
Onto the veggies….cause I still have some crocheting to do!
Let’s call this one a show stopper shall we?!
I mean…really….roasted sweet potatoes…brussels sprouts…apples…cranberries…..SIGH!
That’s not all though…
I was inspired by the dressing from my kale salad recipe and made a variation to drizzle all over the veggies and apples before roasting! To say it is yummy is an understatement for sure!
Go ahead! Make this for you Thanksgiving celebration…you will be quite pleased!

- 2-3 sweet potatoes
- 1 bag brussels sprouts
- 2 apples
- 1 bag of cranberries
- ¼ olive oil
- ¼ cup maple syrup
- 1t mustard
- ½ t salt
- ⅛t liquid smoke
- Preheat oven to 425 degrees.
- Prepare the brussels sprouts by cutting off the end and trimming off any loose pieces. Chop the sweet potatoes into chunks, as well as the apples. Place them all in a baking sheet and toss in the cranberries!
- For the dressing, mix the olive oil, maple syrup, mustard, salt and liquid smoke in a small bowl and then drizzle over the veggies, apples and cranberries. Sprinkle nutmeg over the top of veggie mixture. Bake at 425 degrees for 40 minutes. Enjoy!
