Ever want to make a big old BLT sandwich but don’t want to eat all the carbs involved? If you just answered “YES!” either out loud or in your mind (either reply works for me) then I have got something that may just make you leap for joy!
My brother gave me this idea a while back, he is super cool about eating healthy, fitness and lots of other adventurous stuff! He is even the guy who first told me about this wonderful world of Paleo! So, thank you little brother!

Ahhhh yes, the food!
As I was saying, my brother told me that he made a meal similar to the one I am about to share with you a while back. It sounded super yummy and like something my whole family would like to eat. I of course put a little spin of my own on his idea and that brings us to where we are today! A blog post about Grilled Chicken Breast BLT’s!
Even though summer is technically over by the school year calendar, it is still technically summer for a day or two and still quite warm here in Michigan. It has actually been really humid as well and we are still firing up that grill. Matt is really good at grilling…actually, I should have him do a blog post here about grilling sometime (I wonder if he would agree to that?). We have a pretty good arrangement here at the Hyatt House, I do the kitchen prep and such and he does the grilling! It works well, and his grilled meats just taste better than mine do!
This recipe is really so simple guys! First, you will want to butterfly your chicken breasts. This just means to cut them so they are thin and kind of lay open. Make sense? Now fire up that grill and grill yourself some chicken breasts! We like to season ours with salt, pepper and garlic salt along with a drizzle of olive oil before placing them on the grill. However you like to make yours is totally fine too!
While the chicken is grilling I cook my bacon. There are a couple of ways that you can cook bacon. Stovetop is the good old fashioned way allowing all that grease to splatter your kitchen walls and backsplash…or you can bake your bacon. Baking is how I usually cook my bacon. Just place all your bacon strips on a rimmed baking sheet and bake at 425 degrees for 10-12 minutes. Cooking times vary depending on how greasy the bacon is and how crispy you would like it. Keep an eye on it after 10 minutes and take it out when it looks perfect.
Now you need to make some guacamole, I have an easy recipe here that you will love! You will also need some mayo cause even though mayo isn’t in the acronym for a BLT….we all know that it is a vital part of this meal! My simple mayo recipe is our family favorite! So go ahead and get that guac and mayo ready!
By now, your chicken is probably ready and you are probably famished. How can you not be when you know that you get to eat this?!
Here is the cool part people…you are gonna use the chicken breast like you would a regular old piece of bread. GENIUS! Take that meat and layer bacon, lettuce, tomato, mayo, and guacamole on it just like you would a sandwich and fold the chicken breast over the bottom half. You can even put some cheese on it if you feel like taking it to a whole nother level!!!! I used a bit of Kerry Gold cheese in the one pictured and it was sooooo yummy!
There you have it! A BLT without all the carbs!
