We are in the throws of a hot summer here in the great mitten state! A hot summer for us means lots of swimming (who am I kidding, I would swim a ton even if it was a cool summer…swimming is my fav)!
I don’t know about you, but I gravitate toward the no-bake food when it’s hot outside. I especially love a no-bake recipe that takes less than 5 minutes to stir together! All the people clap your hands!!!!
Let’s face it, summer doesn’t last forever…we still need to eat healthy food…and I must go swimming.
My chocolate chia pudding recipe makes for a super quick breakfast, lunch, snack, dinner or dessert. You can basically eat this anytime you are hungry!
Summer heat = meal flexibility at the Hyatt House, and chia is F.U.L.L. of nutrition so I don’t even worry ’bout missing my meat and veggies once in a while. Toss some fresh berries on top and you have just tilted the scale on over to waaayyyyyy awesome on this one folks!
In honor of summer, keeping life simple, chocolate, chia and swimming, I am keeping this post short and sweet! So, go get yourself some coconut milk from Costco, some fresh berries and of course some chia seeds and stir this deliciousness up! It’s whats for dinner at my house tonight!
- 2 cans of full fat coconut milk
- ½ cup chia seeds
- ½ cup cocoa powder
- ¾ cup coconut sugar
- 1T vanilla extract
- Top with fresh berries
- Pour the contents of two cans of coconut milk into a four cup measuring cup. Add enough water to the coconut milk to reach four cups. You should only need to add about a half a cup of water or so. Stir in the chia seeds, cocoa powder, coconut sugar and vanilla until well blended. Place in the fridge for at least 30 minutes but I think it tastes better if it has sat for a couple of hours before eating. You can also make this up at night to eat the next day! Top with fresh berries of your choice and enjoy!
