Hello Friends! Like most of you, I am about to spend the day cooking a yummy Thanksgiving dinner for my family! My kiddos requested that I make a Thanksgiving roast chicken instead of turkey though! So, chicken it is!
We have so much to be thankful for don’t we! Life is never perfect and we all have our struggles, but in the midst of it all there is such blessing and breathtaking beauty!
I will be counting my blessings while I cook and bake today and will probably find myself teary eyed a bit, and it won’t be from the onions! Pandora will also be helping to set the stage…it’s gonna be a sappy day!
I thought I would bring you a simple recipe for dairy free hot chocolate today. When I think of holidays and cozy winter nights snuggled in with the people I love, I think of warm blankets and mugs of hot chocolate! Hot cocoa is also quite suitable for sipping while you sit quietly and read all by yourself! Versatility at it’s finest!
This recipe can be made in less than 5 minutes! We all need a break from cooking after today huh! Thank God for leftovers for the rest of the weekend…see, thankfulness abounds!
I have been teaching my girls how to make more recipes and this is one they like to make by themselves! Sometimes, we make extra and keep it in a mason jar in the fridge so they can heat it when they just need some cocoa!
Topping each mug with homemade coconut whip cream and some mini chocolate chips makes it even more delicious!
- 2 cups coconut milk
- 2T cocoa powder
- 2T maple syrup
- 1t vanilla
- pinch of salt
- Heat the coconut milk in a saucepan over medium heat. Add in the rest of the ingredients and whisk until well mixed. Pour into two mugs and top with coconut whip cream and mini chocolate chips if you would like! Enjoy!
