This may not be your normal or average flavor combo, but it is certainly lip smackin good!
Sometimes I hear of or think of unusual flavor combinations and just have to try them. This recipe is similar to one that I used to make often, I just had to give it a bit of a makeover and now it’s up to par for my paleo world.
Question for you…
Is there any fruit that is better in the summer than watermelon? Nope! Oddly enough, neither my daughter or my father-in-law like watermelon! I don’t know how my girl and I can share the same DNA and have her not like watermelon! Seriously!
I personally could eat watermelon just about everyday in the summer and that is how we humans should be…watermelon lovers! Case closed!
Now that we have established that, it’s time to talk salad!
It’s a perfectly hot summer evening and you are starting to think about dinner (aka, the rest of your family is begging to be fed). You have been floating on a raft in the sunshine and you don’t really feel like cooking up a big old meal. Since you do need to feed the people who are starting to get hangry, you decide on grilling something to pacify the angry mob. Now, all you need is something that tastes just like summertime…then in a moment of enlightenment, you remember this recipe for Watermelon, Cucumber and Mint salad! Suddenly your reluctance toward the impending meal has changed to sheer anticipation!
Some recipes even have the power to get you our of your bathing suit and into the kitchen! Don’t worry, this doesn’t take long to make, you can get back to floating in no time!
If you know me personally, you will know that I have taken part of that scenario above from real life (Hi Mom, and all you Sandy Piners!!!!! You know I love you!).
So given that we are fast approaching the end of July and we need to squeeze in as much summer fun as possible, I am going to tell you how to make yourself a salad that does indeed taste like summer time!
We have gotta start with our topic of the day…watermelon! Just cut some watermelon up into pretty little wedges.
Now it’s time for the cukes! I tell ya, my Paderno Spiralizer is one of my favorite things! I have been making all kinds of salads and other dishes with veggie noodles. You just cannot resist eating something that is all nice and spirally (is spirally a word?)!
Making noodles with cucumbers is really nice for salads since the spiralizer removes most of the seeds from the middle of the cucumber. This means that you won’t have soggy salads! If you don’t have a spiralizer all you need to do is slice a cucumber in half lengthwise and then remove the seeds from the center before slicing. I do recommend that you go on amazon.com and put a spiralizer on your wish list though!
Our next element today is mint! I love fresh mint! At my parents farm house my Mom had a ginormous patch of mint growing. It was always so pretty and smelled so nice. I have a little herb garden on my deck that is working out quite nicely too.
Freshly picked herbs are the best!
Ok, we have our watermelon sliced, our cucumbers spiralized and our mint picked! We are on a roll! All that is left to do is to slice the red onion, make the dressing and assemble our salad.
Making the dressing is easy as can be. I like to use either avocado oil or olive oil, whichever you like best is totally fine! Add in some apple cider vinegar and salt and pepper and you, my friend are good to go!
Let’s place the cucumber noodles on the bottom of our plate, and top them with our watermelon slices. Now add some red onion slices and black olives to that and then our fresh mint leaves. Drizzle some dressing on top to finish her off!
You can honestly make this in about five minutes folks! Honestly it may be gone in about the same time frame!
If you would rather make this salad in a bowl to serve, that totally works too! I do it both ways depending on what works for that day. There are no strict rules with this one…you will want seconds though!
See, that was just about painless! You can have a beautiful, refreshing salad to go with your meal and get back to floating on your raft!
- 6 to 8 watermelon wedges
- 2 cucumbers, peeled and spiralized or sliced
- ½ red onion
- kalamata olives
- ½ cup avocado oil
- 1T apple cider vinegar
- ¼ t salt
- dash of pepper
- 2T mint leaves
- Slice the watermelon into small wedges and set aside.
- Peel and spiralize the cucumber using the smallest "noodle" blade. You can also cut the cucumber in half lengthwise and spoon out the seeds before slicing into thin slices.
- Place the cucumber noodles on a plate and top with watermelon slices.
- Thinly slice the red onion and place on top of the watermelon and cucumbers along with the kalamata olives.
- Sprinkle the mint leaves around.
- In a small mason jar mix together the avocado oil (or olive oil) along with apple cider vinegar and salt and pepper and mix together well.
- Drizzle the dressing over the salad just before serving!
- **NOTE - If you would prefer to make this salad in a bowl, just add the watermelon, cucumber, red onion and olives to your bowl of choice and toss. Finish with mint and drizzle the dressing over top just before serving!
