Summer and Chicken Salad, that’s what we are going to talk about today folks! I am all about making an easy meal in the summer.
Lots of my days in the summer go something like this…
“Mom, what are we doing today?”
I list off the things I think should be done.
We set about getting our “stuff” done and then I notice it’s getting a little warmer out! Hhmmmm…maybe we should just work really fast and head to the beach or pool!
Cheers and shouts of joy escape my little people’s mouths. They know me. I am a total pushover in the summer!
Heading out for the day means I need to quickly pack a cooler. I think chicken salad and a day swimming go splendidly together!
I like the taste of grilled chicken the best so I fire up the grill. Hey, girls can grill too!
While the chicken breasts are grilling, I chop my celery and onions and sometimes I pick fresh lettuce. If your eyes tend to tear up when you chop onions, stepping outside to pick lettuce can be a life-saver! Now, if your neighbors see you and think something tragic just happened….we know, we know…it’s just the onions!
This container of lettuce is growing right on my back deck along with some pots of fresh herbs! Edible beauty!
I know that I said earlier that I like to pack chicken salad ‘to go’, but I also like to serve it on a pretty plate for a family meal! If you make a double batch of this recipe, you can have it on a pretty plate and then at the beach the next day!
As you can see, I like to add some grapes too! I used to add cheese, but cheese and I had to break up. Some wounds take longer to heal than others!
Ok, I will be serious now! I found a way to make this chicken salad taste so delish (that is how we say delicious at the Hyatt House) that you would NEVER notice the absense of dairy! Really, truly, totally seriously!
Wanna know how? I will tell ya! I use coconut milk and mayonnaise…voila! Using the canned coconut milk for this works the best since it is a creamier consistency. Another secret…making homemade mayonnaise makes this sooooooo yummy! A little bit of dijon never hurt either!
Since I am being all serious today with this post and all, I triple dog dare ya to make this and see for yourself just how yummy it is! Seriously!
- 2 Chicken Breasts, grilled
- ½ cup coconut milk (the kind in the can)
- ½ cup mayonnaise (see this website for a recipe)
- 1T dijon mustard
- ½t salt
- ¼t pepper
- 1 bunch of green onions
- 1 onion
- 1 cup celery, chopped
- ½ cup grapes, halved
- Grill the chicken breasts.
- Chop the onion, green onions and celery into small pieces.
- In a small bowl mix together the coconut milk, mayonnaise, dijon mustard, salt and pepper and set aside.
- When the chicken is cooked and has cooled, cut into bite-sized pieces.
- Add the onions, celery and grapes to the chicken.
- Pour the mayonnaise/coconut milk mixture over the top and stir to combine.
- Serve over a bed of lettuce.
