I have been on a mission to make a dairy free pesto sauce with ingredients that are easy to get locally. I don’t know about you, but I simply cannot find pine nuts locally that are gluten free! I can order some great gluten free pine nuts from nuts.com and often do, but sometimes I just want to grab some pine nuts while I’m out grocery shopping and decide I’m hungry for pesto!
Impulsive menu items can be so tasty…..and soooooo hard to stop thinking about if you can’t find them..it’s a real problem!
I was doing my weekly shopping and the desire for pesto hit me.
What was I to do?
Enter large bag of pecans at Costco….
I was holding these pecans and trying to decide if I could make pesto out of them or not. I decided I would never know unless I tried!
Bag of pecans added to shopping cart!
Next stop, fresh basil!!!
I LOVE fresh basil…the smell is just about the loveliest smell!
All the while driving home I was thinking about how I was going to make this pesto sauce. When I get a new recipe idea on the brain it’s hard to think about anything else. As soon as I had all of my groceries put away, my pecan pesto experiment began.
I put my pecans in my trusty Vitamix, added the fresh basil, a good dose of olive oil, fresh garlic, lemon and some salt and turned the power up!
One of these days I will do a post on the 1001 ways I use my Vitamix daily.
Time for the taste test……….pretty good but missing something…..hhmmmm…..
…..how about nutritional yeast flakes…would that do the trick???
I often find that nutritional yeast flakes fill in the blank if my sauces are a little lacking….love those little yellow flakes!
This sauce required a few taste tests….double dipping taste tests…not because it took a long time to figure out, just because it tasted so delicious I had to keep reminding my taste buds what an ingenious idea this was!
So, if you have the same problem I have finding pine nuts locally that are gluten free and the NEED for pesto springs upon your thoughts, demanding you adhere to your pesto desires, you can grab some pecans and satisfy every pesto craving you have ever had!
Tomorrow’s post will show you what I like to use this pesto on! Yup, I’m gonna make you wait!
Have a beautiful day today!
