Did you just read that post title and think to yourself…”eeeewwwwwww”? How in this world could coconut oil taste good in a cup of coffee? I actually thought the same thing when I first heard of Bullet Coffee drinks! Butter in a cup of coffee?!! But I have a curious mind, especially when it comes to health food, and I had to give it a try! Guess what? I LOVED it! I still do…it’s just I don’t tolerate the butter right now…insert long sigh…..
I love to have a cup of coffee in the morning as I read my Bible or when I start our homeschooling day. You will find me sitting in our schoolroom at my desk reading By The Shores of Silver Lake to my little people on most mornings. Coffee and time with my girls, Laura, Ma, Pa, Mary and Carrie…it just suits me!
We like to envision what life would be like for us if we were neighbors to the Ingalls family. Some things you can never outgrow I guess!
I do appreciate all of my modern conveniences though. Maybe life wouldn’t be quite as grand as I picture it to be reading aloud these words that have shaped the imaginings of countless minds.
One thing is for sure, Ma wouldn’t have had coconut oil or a Vitamix….my world without my Vitamix would be lacking!
The local merchantile wouldn’t have carried my favorite powdered gelatin either…..did I just hear you say “eeeewwwww” again?

When I had to eliminate dairy from my diet I was determined to still drink a good cup of coffee. I tried a few different concoctions trying to get it all just right! I experimented with putting ghee in my coffee like I would have done with my Kerry Gold grass fed butter…not a fan! I am wrinkling my nose as I type just remembering what it tasted like! I also tried mixing in coconut oil with the ghee…better, but the coffee still had a bite to it. I was looking for smooth and creamy. Then it hit me…try gelatin and coconut oil blended with the black liquid cup of all that is good in this world!
Staring into your cupboard for long periods of time can produce brilliance!
I poured my hot coffee into my Vitamix along with one tablespoon of coconut oil and one tablespoon of powdered gelatin, put the lid on and turned that baby on high!
Behold, the power of a Vitamix!
Guess what happened? Okay, you don’t have to guess, I will tell you!
The coffee turned into a delicious creamy liquid! Could it be? Was my morning coffee rescued from immanent doom (I don’t like black coffee)? I took my first sip and was greeted with the creamy goodness I had been missing! Victory!
This has been my favorite way to drink coffee ever since. It takes about 10 seconds to make and you can enjoy a dairy free, preservative free cup of coffee!
P.S. Grass fed gelatin alone is loaded with health benefits, not to mention the benefits of coconut oil! You are actually doing yourself a favor by drinking this!
P.S.S. Do a little happy dance and get your blender out!
- 10 oz of freshly brewed, hot coffee
- 1T coconut oil
- 1T Grass Fed Gelatin (I use Great Lakes brand)
- Place the hot coffee, coconut oil and gelatin in your Vitamix or other blender. Put the lid on and turn to high!
- Pour in your favorite mug
- Put your feet up
- Enjoy every sip
- You can thank me later!
